8 Biscoff cookies, crushed
2 tbsp unsalted butter
7 oz low-fat cream cheese
2 tbsp non-fat Greek yogurt
1/2 cup heavy cream, whipped
2 tbsp honey
1/2 Vanilla bean pod

In a zip-loc bag, crush 8 Biscoff cookies until fine crumbs, then add melted butter
2. Press the crust mixture into the cupcake molds until firm, then chill in the fridge for preferably overnight
3. In two separate bowls, add cream cheese, honey, vanilla bean and Greek yogurt to one, and heavy cream to the other.
4. Beat and whisk the filling mixture until smooth and rid of any clumps or air bubbles. Then, whisk the heavy cream until stiff peaks appear.
5. Gently fold the whipping cream into the cream cheese filling, and mix until fully incorporated
6. Pipe the filling on top of the chilled cheesecake crust, and smooth the top with a spatula.
7. Garnish with Biscoff spread and Biscoff cookies if preferred
8. Plate & Enjoy!
